Ivory Countertop Colors, Quartz, Granite, And More!

Ivory is an off-white color that resembles ivory, the material from which the teeth and tusks of animals (such as, notably, the elephant and the walrus) is made. It has a very slight tint of yellow (Source: Wikipedia).

I am currently remodeling my kitchen and in the process of picking new quartz countertops. I have been to two shops now (carrying all major quartz brands) and looked at tons of samples and they all look off-white to me except for a VERY few white-white options. What am i missing here? are true white counters bad for some reason?
